Pamela Flood challenges Garrett Byrne (Campagne) and David O’Byrne (Richmond) to reimagine their food. In their restaurant kitchens, the chefs prepare their signature dishes as they are
served in the restaurant and Pamela tastes them. Garrett prepares butter poached turbot with hollandaise sauce, while David presents roast quail, fried egg and rosti potatoes. Dietitian Aveen Bannon reveals how much fat, sugar and fibre is in each dish and Pamela breaks the news to the chefs! In part two, the chefs enter the Healthy Appetite kitchen and reveal the changes
they’ll make to their dishes to make them healthier before going head to head in a cook-off. The chefs present their reimagined healthier dishes to three judges – Michelin starred chef Adam Byatt, Aveen and food critic Ross Golden-Bannon who decide which dish improved the most nutritionally while retaining the appearance, flavour and wow-factor of the restaurant original.
